Ingredients

Dry Ingredients:

  • 1 cup (90 g) oats ground into flour or oat flour
  • ½ cup (80 g) rice flour
  • 4 tbsp (32 g) cornstarch or arrowroot flour
  • 2 tbsp coconut sugar or brown sugar
  • 1 tbsp ground flax seeds or chia seeds
  • 1 tsp baking powder

Wet Ingredients:

  • 1 ½ cups (360 ml) plant-based milk (canned lite coconut milk recommended)
  • 1 small banana (80 g)
  • ½ tbsp lemon juice or lime juice
  • ½ tsp vanilla extract
  • Oil for frying (such as coconut or vegetable oil)

Apple Filling:

  • 3 apples, peeled, cored, and chopped
  • 3 tbsp coconut sugar or brown sugar
  • 2 tbsp plant-based milk
  • ½ tbsp lemon juice or lime juice
  • ½ tsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. Mix Dry Ingredients: In a medium bowl, add all the dry ingredients and whisk together to combine evenly.
  2. Blend Wet Ingredients: Place all wet ingredients except the oil into a food processor or blender and process until smooth and fully combined.
  3. Combine Batter: Pour the blended wet ingredients into the bowl with the dry ingredients. Stir with a whisk until a smooth batter forms.
  4. Rest the Batter: Let the batter rest for a few minutes to hydrate the flours and thicken slightly. If the batter becomes too thick, add up to 50 ml more plant-based milk to reach a pourable consistency.
  5. Cook Crepes: Heat a small amount of oil in a small to medium non-stick skillet over medium heat. Pour about ¼ cup of batter into the skillet, then spread it thinly and evenly using the back of a ladle. Cook for 2-4 minutes until the edges lift easily and the crepe is golden underneath. Flip carefully and cook another 1-2 minutes. Repeat with remaining batter, adding oil as needed.
  6. Prepare Apple Filling: Combine chopped apples, sugar, plant-based milk, lemon juice, cornstarch, and cinnamon in a skillet or saucepan. Stir well off heat, then turn the stove to medium and bring the mixture to a boil. Reduce heat and simmer gently for a few minutes until the apples are soft and the filling thickens.
  7. Serve: Place a few teaspoons of warm apple filling onto each crepe, roll or fold them, and drizzle with caramel sauce if desired. Serve immediately and enjoy!

Notes

  • The batter will thicken as it rests; add extra plant-based milk gradually if it becomes too thick to spread.
  • Oat flour can be made by grinding oats finely in a blender or food processor.
  • Use canned lite coconut milk for a creamy texture with lower fat content.
  • Caramel sauce pairs beautifully with these crepes; consider making a simple vegan caramel sauce for drizzling.
  • This recipe is naturally vegan and gluten-free when using gluten-free oats and rice flour.
