Ingredients

Blueberry Syrup

  • 1 cup fresh or frozen blueberries
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tablespoon lemon juice (fresh is best)

To Serve

  • Chilled sparkling water or club soda
  • Ice, for serving
  • Optional garnishes: lemon slices, mint sprigs, extra blueberries

Instructions

  1. Make the Blueberry Syrup: In a small saucepan, combine the blueberries, sugar, water, and lemon juice. Stir to combine the ingredients evenly. Place the saucepan over medium heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer and cook for about 10 to 12 minutes, stirring occasionally, until the blueberries burst and the syrup thickens slightly.
  2. Strain the Syrup: Set a fine mesh strainer over a bowl or jar. Carefully pour the cooked blueberry mixture through the strainer, using the back of a spoon to press down on the solids. Extract as much syrup as possible while separating out the pulp. Discard the pulp or save it to add to yogurt or oatmeal.
  3. Cool the Syrup: Allow the strained syrup to cool to room temperature. Once cooled, transfer it into a glass jar or airtight container and refrigerate until ready to use. The syrup will continue to thicken as it chills.
  4. Mix the Soda: When ready to serve, fill a glass with ice. Add 2 to 3 tablespoons of the blueberry syrup (adjust to your taste for sweetness and flavor strength). Top with chilled sparkling water or club soda. Stir gently to combine and garnish with optional lemon slices, mint sprigs, or extra blueberries if desired.
