These Cheesy Pepperoni Lunch Bites are a quick and easy snack perfect for parties, lunchboxes, or anytime you crave a tasty, bite-sized treat. With crispy buttery crackers topped with gooey mozzarella, zesty marinara, and flavorful pepperoni, these bites bring all the deliciousness of pizza in a convenient finger food form.

Ingredients

Crackers & Cheese

  • ¾ cup grated mozzarella cheese
  • Approximately 30 buttery-style round crackers such as Ritz

Sauce & Toppings

  • ½ cup marinara or traditional pizza sauce
  • 30 slices of mini pepperoni or roughly chopped standard pepperoni
  • ¼ teaspoon dried Italian herb blend
  • Optional garnishes: grated Parmesan, crushed red chili flakes, dried oregano

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C), and line a baking tray with foil or parchment paper to make cleanup easier.
  2. Arrange Crackers: Spread the buttery crackers evenly in a single layer across the prepared baking sheet to ensure even cooking.
  3. Add Sauce: Place about ½ teaspoon of marinara or pizza sauce onto the center of each cracker, providing a flavorful base.
  4. Top with Cheese: Sprinkle 1 to 2 teaspoons of grated mozzarella cheese evenly over the sauce on each cracker.
  5. Add Pepperoni: Place one mini pepperoni slice or a few pieces of chopped standard pepperoni on top of the cheese layer for each cracker.
  6. Season: Lightly dust the tops of each bite with the dried Italian herb blend, and optionally add extra garnishes such as grated Parmesan, crushed red chili flakes, or dried oregano for extra flavor.
  7. Bake: Bake the tray in the preheated oven for 6 to 8 minutes, or until the cheese has fully melted and just started to bubble and brown slightly.
  8. Cool and Serve: Remove from the oven and allow the bites to rest for 2 minutes to let the cheese set slightly, then serve warm and enjoy your delicious cheesy pepperoni snacks.

Notes

  • Use buttery crackers like Ritz for the best flavor and texture contrast with the melted cheese and sauce.
  • If you don’t have mini pepperoni, roughly chop standard pepperoni slices to fit.
  • Feel free to customize toppings with your favorite herbs and spices or add a sprinkle of red pepper flakes for a spicy kick.
  • Serve these bites immediately after baking for the best texture and flavor.
  • These make a great party appetizer or lunchbox snack and can be doubled easily for larger groups.
