This Cheesy Tortilla Lasagna Pie is a delicious, layered casserole combining seasoned ground beef or turkey with Mexican-inspired spices, layered between soft tortillas and gooey melted cheeses. Perfect for a comforting dinner, this savory pie blends the flavors of lasagna and a taco filling, baked to golden perfection and topped with creamy sour cream or ricotta.

Ingredients

Meat & Sauce

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • 1 cup salsa or marinara
  • 1 can (10 oz) diced tomatoes with green chilies (optional)

Layers

  • 8 medium flour tortillas (or corn tortillas for gluten-free)
  • 2 cups shredded mozzarella
  • 1 cup shredded cheddar
  • ½ cup sour cream or ricotta
  • Optional: chopped bell peppers, spinach, or other vegetables

Instructions

  1. Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round cake pan, a deep pie dish, or a cast-iron skillet to prevent sticking and ensure easy serving.
  2. Cook Meat Filling: Heat a skillet over medium-high heat and cook the ground beef or turkey with the diced onion until the meat is browned and the onion is soft. Add the minced garlic, cumin, smoked paprika, salt, and pepper, and cook for one more minute to release the flavors. Stir in the salsa and diced tomatoes with green chilies if using, then let the mixture simmer for about 5 minutes until it thickens slightly.
  3. Layer the Pie: Begin assembling your lasagna pie by placing one tortilla at the bottom of the prepared pan. Spread a generous layer of the meat sauce over the tortilla, then dollop sour cream or ricotta across the meat layer. Sprinkle a mixture of shredded mozzarella and cheddar cheese on top. Repeat the layering sequence — tortilla, meat sauce, creamy layer, and cheese — finishing with a tortilla on the very top. Smother the last tortilla with the remaining cheese to create a cheesy crust.
  4. Bake: Cover the assembled pie loosely with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and continue baking for an additional 10 minutes or until the top turns golden brown and bubbly.
  5. Rest & Serve: Allow the tortilla lasagna pie to rest for 10 minutes after removing it from the oven to help it set, making it easier to slice neatly. Serve warm on its own or accompanied by a fresh salad, guacamole, or refried beans for a complete meal.

Notes

  • You can substitute ground turkey for beef to reduce fat content and add variety.
  • For a gluten-free version, use corn tortillas instead of flour tortillas.
  • Add vegetables like chopped bell peppers or spinach in the meat sauce for extra nutrients and flavor.
  • Sour cream or ricotta can be used interchangeably based on preference for creaminess.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
  • Feel free to swap salsa with marinara sauce if you prefer more traditional Italian flavors.
