This Chicken Avocado Melt Sandwich is a quick and delicious lunch option featuring creamy mashed avocado, tender shredded chicken, and melted cheddar or Monterey Jack cheese toasted to perfection on artisan or sourdough bread. Enhanced with optional mayonnaise and lemon juice, it offers a flavorful, satisfying meal ideal for busy days.

Ingredients

Bread and Spread

  • 2 slices of sourdough or artisan bread
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tbsp butter for toasting

Filling

  • 1/2 ripe avocado, mashed
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese

Optional Add-ins

  • Sliced tomato
  • Red onion
  • Crispy bacon

Instructions

  1. Prepare the avocado spread: In a small bowl, mash the ripe avocado together with the lemon juice, salt, and pepper until smooth and well combined. This creates a creamy and flavorful base for the sandwich.
  2. Assemble the sandwich: Spread mayonnaise or aioli on one side of each bread slice if using. On the unspread side of one slice, evenly distribute the avocado mixture, then layer with the shredded chicken and two slices of cheese. Add any optional add-ins like sliced tomato, red onion, or crispy bacon if desired. Top with the second bread slice, mayo side facing out.
  3. Toast the sandwich: Heat butter in a skillet over medium heat until melted. Place the assembled sandwich in the skillet and cook for 3–4 minutes on each side, pressing gently with a spatula to ensure even grilling. Toast until the bread is golden brown and the cheese is melted thoroughly.
  4. Serve: Remove the sandwich from the pan and let it sit for a minute before slicing in half. Serve hot for the best taste and melted texture.

Notes

  • Use ripe avocado for smoother texture and better flavor.
  • Adjust cooking time slightly depending on your stovetop heat to avoid burning the bread.
  • For a healthier option, you can use whole grain bread and low-fat cheese.
  • Try adding different cheeses such as mozzarella or pepper jack for variation.
  • If you prefer, use leftover rotisserie chicken to save on prep time.
