Ingredients

Crust and Topping

Cheesecake Filling

  • 1 (8 oz) Cream Cheese, Softened
  • 1/4 cup Sugar
  • 1 tbsp Flour
  • 1/2 tsp Vanilla Extract
  • 1 Egg
  • 3/4 can Cherry Pie Filling (approximately 9 ounces)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray an 8 x 8 inch baking pan with non-stick cooking spray and set it aside.
  2. Make the Crust: In a small bowl, combine the sugar cookie mix with the cold, cubed butter using a fork to mix until the mixture becomes crumbly. Reserve 3/4 cup of this crumbly mixture for the topping.
  3. Bake the Crust: Press the remaining crumb mixture firmly into the bottom of the prepared pan to form an even crust. Bake in the preheated oven for 10 minutes, then place the pan in the refrigerator to cool quickly.
  4. Prepare the Cheesecake Filling: While the crust cools, beat together the softened cream cheese, sugar, flour, vanilla extract, and egg in a bowl until the mixture is smooth and creamy.
