A warm and hearty Cozy Lentil and Carrot Stew made with tender lentils simmered in flavorful vegetable broth, enhanced by aromatic spices like cumin and smoked paprika. Perfect for a comforting, nutritious meal that’s easy to prepare.

Ingredients

Vegetables

  • 3 large carrots, peeled and sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Legumes & Broth

  • 1 cup lentils, rinsed
  • 4 cups low sodium vegetable broth

Spices & Oil

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat the oil: Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Sauté aromatics: Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent, about 3-5 minutes.
  3. Add carrots and spices: Stir in the sliced carrots, ground cumin, and smoked paprika. Cook for about 5 minutes to soften the carrots and release the spices’ aromas.
  4. Add lentils and broth: Mix in the rinsed lentils, then pour in 4 cups of low sodium vegetable broth. Stir to combine.
  5. Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 25-30 minutes, or until the lentils are tender and the stew has thickened.
  6. Season and serve: Season with salt and pepper to taste. Serve the stew hot for a comforting meal.

Notes

  • For extra flavor, garnish with fresh herbs like parsley or cilantro before serving.
  • If you prefer a creamier texture, use an immersion blender to partially blend the stew.
  • Adjust seasoning as needed depending on the saltiness of your broth.
  • This stew pairs well with crusty bread or over cooked rice for a filling meal.
