A creamy and comforting Cajun Potato Soup featuring tender potatoes cooked in a flavorful broth with a spicy Cajun twist, topped with crispy turkey bacon for added texture and savory depth.

Ingredients

Soup Base

  • 4 cups potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Pepper to taste

Toppings

  • 1 cup turkey bacon, chopped

Instructions

  1. Cook Turkey Bacon: In a large pot, cook the chopped turkey bacon over medium heat until crisp. Remove the bacon pieces from the pot with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. Sauté Aromatics: In the same pot with the bacon fat, add the chopped onion and minced garlic. Sauté until the onion is soft and translucent, about 3-5 minutes, stirring occasionally to prevent burning.
  3. Cook Potatoes: Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender when pierced with a fork, approximately 15-20 minutes.
  4. Add Cream and Seasoning: Stir in the heavy cream and Cajun seasoning into the soup base. Mix thoroughly to combine the flavors.
  5. Blend Soup: Use an immersion blender directly in the pot to blend the soup until smooth and creamy. Alternatively, carefully transfer portions to a blender and puree, then return to the pot.
  6. Final Seasoning and Serve: Return the blended soup to low heat if needed. Season with salt and pepper to your taste. Serve hot, garnished generously with the crispy turkey bacon pieces on top.

Notes

  • For a thicker soup, reduce the amount of chicken broth or let the soup simmer uncovered to thicken before blending.
  • You can substitute turkey bacon with regular bacon or a vegetarian bacon alternative to suit dietary preferences.
  • Adjust Cajun seasoning according to your spice tolerance; add more for a spicier kick.
  • This soup pairs well with crusty bread or a light green salad.
  • To make it gluten-free, ensure the chicken broth used is gluten-free.
