Ingredients

Chicken and Vegetables

  • 3 boneless, skinless chicken breasts, cut into bite-sized chunks
  • 1/2 yellow onion, finely diced
  • 1 tablespoon finely chopped garlic
  • 12 ounces frozen assorted vegetables

Sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon chicken bouillon granules
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup milk

Pasta

  • 12 ounces egg noodles

Instructions

  1. Cook the chicken: Heat a large skillet over medium-high heat. Season chicken chunks with salt and pepper. Cook them for 3-4 minutes per side until browned and fully cooked. Remove from skillet and set aside.
  2. Sauté aromatics: In the same skillet, melt butter over medium heat. Add diced onion and sauté for 5-7 minutes until softened and translucent. Stir in garlic and cook for 1 minute until fragrant.
  3. Create the sauce: Sprinkle chicken bouillon granules and paprika over the onions and garlic and stir for 30 seconds. Add the condensed cream of mushroom and cream of chicken soups, then gradually whisk in the milk until the sauce is smooth. Let it simmer gently.
  4. Cook vegetables and combine: Add the frozen assorted vegetables to the simmering sauce and cook for 5-7 minutes until they are tender-crisp. Return the cooked chicken to the skillet and stir everything together, heating through. Adjust seasoning with salt and pepper if needed.
  5. Cook egg noodles: Meanwhile, bring a pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain well.
  6. Combine and serve: Add the drained noodles to the skillet with the chicken and vegetable sauce. Toss gently to coat the noodles evenly. Serve immediately for a warm, comforting meal.

Notes

  • Use fresh or frozen vegetables based on availability.
  • For extra creaminess, add a splash more milk if needed.
  • Adjust seasoning to taste, especially salt, as bouillon granules add sodium.
  • Chicken breasts can be swapped for thighs for a juicier option.
  • Leftovers store well in the refrigerator for up to 3 days.
  • Reheat gently to avoid drying out the sauce.
