  • Black pepper, to taste

Instructions

  1. Prepare the Tomatoes and Herbs: Finely chop the tomatoes and place them in a large mixing bowl. Add the chopped red onion, minced garlic, lemon zest, dill, and parsley to the bowl, ensuring all ingredients are evenly combined.
  2. Make the Batter: Into the tomato and herb mixture, add the plain flour, baking powder, salt, and black pepper. Mix thoroughly until the ingredients come together into a cohesive dough-like batter suitable for spooning.
  3. Heat the Oil: Pour olive oil into a frying pan to cover the bottom and warm it over medium heat until hot but not smoking, preparing for frying the fritters.
  4. Fry the Fritters: Using a heaping tablespoon, drop portions of the batter into the hot oil, frying each fritter for about 2 minutes or until the bottom side is golden brown. Carefully flip them to cook the other side until it is equally browned and crisp.
