These Crispy Salmon Bites with Sauce are a delicious and healthy appetizer or snack featuring tender salmon meatballs baked to perfection and served with a creamy, tangy avocado sauce. The combination of fresh herbs and spices in the salmon mixture paired with the smooth avocado dip creates a flavorful and satisfying dish perfect for any occasion.

Ingredients

Meatballs

  • 1 lb salmon fillet, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for baking)

Avocado Sauce

  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking sheet with a little olive oil or nonstick spray to prevent sticking.
  2. Prepare Salmon Mixture: In a large mixing bowl, combine the finely chopped salmon, breadcrumbs, beaten egg, fresh parsley, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Form Meatballs and Bake: Shape the salmon mixture into small meatballs, about the size of a tablespoon. Place them evenly spaced on the prepared baking sheet. Drizzle the olive oil over the meatballs to help crisping. Bake in the preheated oven for 12-15 minutes or until the meatballs are firm and the internal temperature reaches 145°F (63°C).
  4. Make Avocado Sauce: While the meatballs are baking, prepare the sauce by blending the ripe avocado, sour cream, lemon juice, minced garlic, salt, and pepper together until smooth and creamy.
  5. Serve: Plate the warm salmon meatballs and generously drizzle them with the avocado sauce. Garnish with extra chopped parsley if desired and serve immediately.

Notes

  • Ensure the salmon is very finely chopped to help the meatballs hold together better.
  • For a gluten-free option, substitute breadcrumbs with gluten-free breadcrumbs or almond flour.
  • The avocado sauce can be made ahead and refrigerated, but add lemon juice just before serving to prevent browning.
  • Check meatball internal temperature with a food thermometer to ensure safe cooking.
  • Adjust seasoning in both meatballs and sauce to taste for best results.
