A refreshing and comforting Earl Grey Bubble Tea recipe that combines the rich flavors of Earl Grey tea with chewy tapioca pearls, sweetened with brown sugar syrup, and chilled with milk and ice for the perfect homemade bubble tea experience.

Ingredients

Tea and Milk

  • 625 g dairy or non-dairy milk (oat milk recommended)
  • 4 Earl Grey tea bags

Tapioca Pearls and Syrup

  • 100 g tapioca pearls
  • 50 g brown sugar
  • Ice as needed

Instructions

  1. Steep the Tea: In a small pot, add the milk and tea bags. Bring to a simmer, then turn off the heat. Cover and let steep for 10 minutes to infuse the milk with Earl Grey flavor.
  2. Extract Tea Flavor: Press the tea bags against the pot’s side using the back of a spoon to squeeze out all the tea-infused milk. Discard the tea bags. Transfer the milk tea into a glass container with a spout, cover, and chill in the fridge.
  3. Boil Tapioca Pearls: Rinse the pot and add about 1 inch of water. Bring it to a rolling boil. Add the tapioca pearls immediately and stir to prevent sticking. Boil uncovered for 15 minutes.
  4. Let Pearls Sit: Remove the pot from heat, cover it, and let the tapioca pearls sit for another 15 minutes to finish cooking and soften.
  5. Make Brown Sugar Syrup: Place the brown sugar in a small bowl. Using a slotted spoon, transfer cooked pearls into the bowl, draining most liquid. Stir with the heat from the pearls to dissolve the sugar into a syrup. Add 1-2 tablespoons water if mixture is too dry.
  6. Assemble Bubble Tea: In each serving glass, add about 100 g of tapioca pearls with syrup. Fill the glass ¾ or full with ice. Pour about 300 g of chilled Earl Grey milk tea over the ice and pearls. Stir well. Add leftover brown sugar syrup to taste if desired.
