Ingredients

Carrots

  • 1 kilogram frozen baby carrots, defrosted for one hour (or fresh baby carrots blanched for 3 minutes)

Garlic Butter Sauce

  • 1/3 cup salted butter, melted (if using unsalted butter, add 1/2 teaspoon salt after melting)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Garnish

  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to ensure it’s hot and ready for roasting the carrots.
  2. Prepare Carrots: Place the defrosted or blanched baby carrots in a 9-inch by 13-inch baking dish or equivalent size, spreading them evenly.
  3. Mix Garlic Butter: In a small bowl, combine the melted butter with garlic powder and dried parsley. If you used unsalted butter, mix in 1/2 teaspoon salt now.
  4. Coat Carrots: Drizzle the garlic butter mixture evenly over the carrots. Toss well within the baking dish to ensure all carrots are coated with the flavorful butter mixture.
  5. Roast: Roast the carrots in the preheated oven at 375 degrees Fahrenheit for about 25 minutes, or until the carrots are just barely fork-tender.
