This Grilled Cheese Burrito is a delicious and easy lunch option that combines seasoned ground beef, rice, creamy sauces, and melted cheeses all wrapped in a warm flour tortilla and grilled to crispy perfection. Perfect for a satisfying meal that merges Tex-Mex flavors with the comfort of a grilled cheese sandwich.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef (8–10 mins): In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease to avoid sogginess. Add the taco seasoning along with ¼ cup of water, then simmer for 5 minutes to blend the flavors and thicken the mixture.
  2. Warm the Tortillas: Heat the tortillas either on a dry skillet for a few seconds per side or microwave them briefly to make them flexible and easy to roll without tearing.
  3. Assemble the Burrito (5 mins): Lay a warmed tortilla flat on a clean surface. Layer evenly with cooked white rice, the seasoned ground beef, nacho cheese sauce, chipotle sauce, and sour cream. Finally, sprinkle the shredded cheddar and mozzarella cheeses on top for that melty, cheesy bite.
  4. Grill the Burrito (3–4 mins per side): Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese onto the pan. Place the burrito seam-side down on the cheese to help seal it while cooking. Grill until the cheese melts and forms a crispy golden-brown crust. Flip the burrito carefully and repeat the grilling on the other side until evenly crisp and the cheese is melted inside.

Notes

  • You can use homemade taco seasoning to control the salt and spice levels.
  • For extra crispiness, brush the outside of the tortilla with a little butter or oil before grilling.
  • Substitute flour tortillas with whole wheat for a healthier option.
  • Adjust the amount of chipotle sauce to your preferred spice level.
  • Make sure to keep the heat medium to avoid burning the tortilla while ensuring cheese thoroughly melts.
