Ingredients

Strawberry Layer

Oatmeal Layers

Instructions

  1. Prepare the strawberry filling: In a mixing bowl, combine the diced strawberries with maple syrup, lemon juice, lemon zest, sea salt, and tapioca starch. Stir well to coat all the strawberries evenly and set aside to thicken while preparing the oatmeal layers.
  2. Mix dry oat layer ingredients: In a large bowl, combine the rolled oats, almond flour, baking soda, and sea salt. Mix thoroughly to ensure even distribution of the leavening agent and salt.
  3. Add wet ingredients to dry mixture: Add the maple syrup, solid coconut oil, and lemon juice to the dry oat mixture. Use your hands or a spatula to combine until a crumbly but cohesive dough forms.
  4. Assemble the bars: Preheat your oven to 350°F (175°C). Press about two-thirds of the oatmeal mixture into the bottom of a lined or greased baking dish evenly to form the base layer.
