These Homemade Easy Cheese Pizza Pockets are a delightful snack or meal option featuring a crispy dough filled with rich tomato sauce, melty mozzarella, flavorful Parmesan, and optional toppings like pepperoni and vegetables. Perfectly golden and seasoned with Italian herbs and chili flakes, they are baked or air fried to perfection and make an irresistible savory treat.

Ingredients

Dough

  • 1 package of refrigerated pizza dough (alternatively, use puff pastry or croissant dough for a crispier result)

Filling

  • 120 ml tomato or pizza sauce
  • 180 g shredded mozzarella
  • 25 g freshly grated Parmesan
  • 30 g mini pepperoni or cooked bratwurst, diced (optional)
  • 30 g chopped bell pepper, mushrooms, or olives (optional)
  • 1 tsp Italian herbs
  • A pinch of chili flakes (optional)

Topping

  • 1 egg, beaten (for brushing)
  • Dried oregano or garlic powder, for garnish

Instructions

  1. Preheat the oven or air fryer: Preheat your oven to 200°C with top and bottom heat or set your air fryer to 190°C.
  2. Prepare the baking surface: Line a baking tray with parchment paper to ensure the pockets do not stick and cook evenly.
  3. Roll out the dough: On a floured surface, roll out the pizza dough evenly. Cut it into equal-sized rectangles or circles about 10 × 15 cm in size.
  4. Add the filling: Spread 1 tablespoon of tomato sauce in the center of each dough piece. Generously sprinkle shredded mozzarella and then Parmesan cheese over the sauce. Add diced pepperoni or bratwurst and chopped vegetables if using. Sprinkle Italian herbs and chili flakes over the fillings.
  5. Shape the pockets: Fold the dough over the filling to form pockets. Seal the edges tightly with the tines of a fork to prevent filling leakage. Brush the tops with beaten egg, then sprinkle with dried oregano or garlic powder for extra flavor and a golden finish.
  6. Bake or air fry: Bake in the preheated oven for 15–18 minutes or air fry at 190°C for 8–10 minutes, flipping halfway through, until the pockets are golden brown and cooked through.
  7. Cool and serve: Allow the pizza pockets to cool for 5 minutes before serving. Serve warm, ideally with extra marinara sauce for dipping.

Notes

  • Using puff pastry or croissant dough will give a crispier texture compared to regular pizza dough.
  • Feel free to customize the filling with your favorite vegetables and meats.
  • Ensure edges are sealed tightly to avoid filling leakage during baking.
  • Adjust baking times if your oven or air fryer cooks hotter or cooler.
  • Letting the pockets rest for a few minutes after baking helps the filling set and prevents burns while eating.
