Bacon

  • 15 rashers/strips of smoked streaky bacon

Sausages

  • 30 cocktail sausages

  • 2 tbsp honey

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) fan-assisted to ensure even cooking.
  2. Prepare Bacon: Take each rasher of smoked streaky bacon and stretch it gently, then slice it in half widthways to create thinner strips.
  3. Wrap Sausages: Take one cocktail sausage and wrap a half strip of the prepared bacon around it, ensuring the bacon seam is underneath to keep it secure during cooking.
  4. Arrange on Tray: Place each bacon-wrapped sausage seam-side down on a baking tray. Repeat for all sausages and bacon strips.
  5. Bake: Place the baking tray in the preheated oven and cook for 25 minutes, or until the sausages are fully cooked and the bacon has turned crisp.
  6. Add Honey: Drizzle the 2 tablespoons of honey evenly over the baked sausages and return the tray to the oven for an additional 5 minutes. This will caramelize the honey slightly and add a lovely sweet glaze.
  7. Serve: Carefully remove the tray from the oven and let the Pigs in Blankets cool for about a minute, as the honey will be hot. Then transfer them to a serving plate and enjoy warm.
