Delight in the fresh and vibrant flavors of Marinated Tomatoes, a simple yet flavorful salad that combines ripe tomatoes with a zesty herb and garlic marinade. Perfect as a refreshing side dish or a light salad, this recipe highlights the natural sweetness of tomatoes enhanced by a tangy red grape vinegar dressing.

Ingredients

Tomatoes

  • 1.5 pounds ripe tomatoes

Marinade

  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons red grape vinegar (or red wine vinegar)
  • ⅓ cup red onion, finely chopped
  • 1 clove garlic, minced
  • 2 teaspoons basil, chopped
  • 2 teaspoons parsley, finely chopped
  • 1 teaspoon dill, finely chopped
  • Salt and freshly ground pepper, to taste

Instructions

  1. Prepare the tomatoes: Rinse the ripe tomatoes under cold water and pat them dry with a towel. Slice the tomatoes into ⅓ inch thick slices and arrange them evenly in a large shallow dish.
  2. Make the marinade: In a bowl, whisk together the extra virgin olive oil, red grape vinegar, finely chopped red onion, minced garlic, chopped basil, parsley, dill, salt, and freshly ground pepper until well combined.
  3. Marinate the tomatoes: Pour the prepared marinade evenly over the arranged tomato slices, ensuring all slices are coated. Spread the marinade gently so the flavors penetrate each slice.
  4. Refrigerate and soak: Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours, allowing the tomatoes to soak up the flavorful marinade. Flip the tomato slices once halfway through the marinating time for even flavor absorption.
  5. Serve: Remove from the fridge and serve the marinated tomatoes chilled as a fresh salad or a vibrant side dish to complement your favorite meals. Enjoy the burst of fresh herbaceous and tangy flavors!
