Ingredients

Matcha Puppy Chow

  • 1 cup (170 g) couverture white chocolate chips
  • ¼ teaspoon salt
  • 4 ½ teaspoon (10 g) matcha powder
  • 4 cups Chex rice cereal

Powdered Sugar Dusting

  • 1 cup (210 g) powdered sugar
  • 2 teaspoons matcha powder

Instructions

  1. Melt the white chocolate: Using a double boiler method, place the salt and white chocolate chips in a heatproof bowl. Set the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Heat gently on low and stir continuously until the chocolate is completely melted and smooth.
  2. Sift in the matcha powder: Using a fine-mesh sieve, sift the matcha powder into the melted white chocolate to remove any lumps. Stir gently with a spatula until the mixture is smooth and fully combined.
  3. Mix the melted matcha chocolate with cereal: Place the Chex rice cereal into a large mixing bowl. Working in three batches, pour the matcha white chocolate over the cereal and gently fold with a rubber spatula until all the pieces are evenly coated. Set aside to cool to room temperature.
  4. Whisk powdered sugar and matcha: In a separate bowl, whisk together the powdered sugar and matcha powder until fully combined and evenly mixed.
  5. Toss cereal with powdered sugar mixture: Once the coated cereal has cooled, transfer it along with the matcha powdered sugar mix into a large gallon ziplock bag. Seal the bag tightly and shake vigorously until the cereal is coated evenly with the powdered sugar. Add more powdered sugar mix if needed to ensure full coverage.
  6. Chill and serve: Spread the coated cereal onto a large parchment-lined baking sheet and refrigerate uncovered for 15 to 30 minutes to allow the coating to set and dry. Store the finished Matcha Puppy Chow in an airtight container in the refrigerator for freshness.
