Instructions

  1. Prepare the onions: Peel the onions and slice them into 1/2-inch-thick rings. Carefully separate the rings to maintain their shape for stuffing.
  2. Fill with cheese: Slice the mozzarella cheese into 4 even strips. Nest smaller onion rings inside larger rings and fill the space between them with the mozzarella strips. Repeat this process for all rings to create the stuffed onion rings.
  3. Freeze the stuffed rings: Arrange the stuffed onion rings in a single layer on a tray. Place the tray in the freezer and freeze for 1 hour until the rings become firm enough to handle for breading.
  4. Set up dredging stations: Prepare three separate bowls: one with the all-purpose flour, one with the beaten eggs, and one with the plain breadcrumbs. Remove the frozen onion rings from the freezer for coating.
  5. Coat the rings: Dredge each stuffed onion ring first in flour, then dip into the beaten eggs, and coat thoroughly with breadcrumbs. For added crispiness, dip again into egg and breadcrumbs. Place the coated rings back on a tray and freeze until ready to fry to maintain their shape.
  6. Heat oil and fry: Pour vegetable oil into a deep pot and heat to 350°F (175°C). Fry the coated onion rings in batches, turning occasionally to cook evenly, for about 2 to 3 minutes or until golden brown and crisp. Avoid over-frying to prevent the cheese from leaking out.
  7. Drain and serve: Using a slotted spoon, remove the fried onion rings from the oil and drain them on paper towels to remove excess oil. Serve hot with marinara sauce for dipping.
