No-Bake Rocky Road Squares are a delicious and effortless treat combining rich chocolate, crunchy nuts, sweet marshmallows, and crumbly graham crackers. These squares require no baking, making them perfect for quick preparation and satisfying any sweet tooth with a fudgy, nostalgic dessert.

Ingredients

Rocky Road Squares

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 1 cup chopped graham crackers or digestive biscuits
  • 3/4 cup chopped walnuts or almonds
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with parchment paper to prevent sticking and make it easier to remove the squares once set.
  2. Melt Ingredients: In a saucepan over low heat, melt together the semi-sweet chocolate chips, unsalted butter, and light corn syrup (or honey), stirring frequently until the mixture is smooth. Remove from heat and stir in the vanilla extract and salt. Let the mixture cool for 5 minutes to slightly thicken.
  3. Combine Ingredients: Fold in the mini marshmallows, chopped graham crackers (or digestive biscuits), and chopped walnuts (or almonds) until everything is thoroughly coated with the chocolate mixture.
  4. Press and Chill: Press the mixture evenly into the prepared pan, ensuring it is compacted well. Place the pan in the refrigerator and chill for 2 hours or until the squares are firm and set.
  5. Serve: Once firm, remove from the refrigerator, lift the parchment paper to take out the block, cut into squares, and serve immediately.

Notes

  • If you prefer a nut-free version, simply omit the walnuts or almonds and add extra graham crackers or an alternative crunchy ingredient.
  • Light corn syrup can be substituted with honey as a natural sweetener, but this might slightly alter the texture and flavor.
  • Use parchment paper for easy removal and cleaner edges on your squares.
  • Store leftover Rocky Road Squares in an airtight container in the refrigerator for up to one week.
  • Mini marshmallows can be replaced with regular marshmallows cut into smaller pieces if unavailable.
