Snickerdoodle Cobbler is a deliciously warm and comforting dessert that combines the classic cinnamon-sugar flavors of snickerdoodle cookies with a moist, tender cobbler texture. This easy-to-make cobbler features a spiced batter base topped with a sweet cinnamon sugar layer and a hot water sauce that creates a luscious, gooey finish when baked. Perfect for cozy gatherings or a sweet treat any time of the year.

Ingredients

Batter

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup milk
  • 1 tsp vanilla extract
  • 4 tbsp melted butter

Cinnamon Sugar Topping

  • ½ cup brown sugar
  • 1 tsp ground cinnamon

Sauce Layer

  • 1 cup boiling water

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon to evenly distribute the spices and leavening agents.
  2. Add Wet Ingredients: Stir in the melted butter, milk, and vanilla extract into the dry mixture. Mix until you achieve a smooth batter without lumps.
  3. Assemble Cobbler: Grease a baking dish lightly, then spread the batter evenly across the bottom. In a separate small bowl, combine the brown sugar and ground cinnamon for the topping. Sprinkle this mixture evenly over the batter layer.
  4. Create the Sauce Layer: Carefully pour the boiling water over the cinnamon sugar topping. Do not stir; the water will seep down creating a sauce during baking.
  5. Bake: Place the dish into a preheated oven at 350°F (175°C) and bake for 35 to 40 minutes until the cobbler is golden on top and bubbling around the edges.
  6. Serve Warm: Allow the cobbler to rest for 10 minutes after baking to set the sauce and improve texture before serving warm. Enjoy as is or with vanilla ice cream.

Notes

  • Be careful when pouring boiling water to avoid splashes.
  • Letting the cobbler rest improves the sauce consistency.
  • Use a glass or ceramic baking dish for even heat distribution.
  • This dessert is best served warm but can be reheated gently.
  • Optionally, top with whipped cream or vanilla ice cream for extra indulgence.
