Ingredients

Syrup

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water

Fruit

  • 1 cup (125g) fresh cranberries, rinsed and patted dry
  • Extra granulated sugar, about 1 cup, for coating

Instructions

  1. Make Simple Syrup: In a medium saucepan, combine 1 cup granulated sugar and 1 cup water. Stir over medium heat until the sugar is completely dissolved. Remove from heat and allow the syrup to cool until lukewarm.
  2. Coat Cranberries: Add the rinsed and dried fresh cranberries to the lukewarm simple syrup. Gently stir to ensure every cranberry is fully coated, being careful not to crush the berries.
  3. Dry the Syrupy Cranberries: Using a slotted spoon, transfer the syrup-coated cranberries onto a wire rack set over a baking sheet. Air dry for 1 to 3 hours, or until the syrup on the cranberries feels tacky to the touch.
  4. Roll in Sugar: Pour about 1 cup of extra granulated sugar into a shallow dish. Working in small batches, gently roll the tacky cranberries in the granulated sugar until they are evenly and generously coated with a sparkling crystalline layer.
  5. Final Drying: Transfer the sugared cranberries back to a clean wire rack. Allow them to dry at room temperature for at least another hour, or until the sugar coating feels firm. Store in an airtight container at room temperature for 3-4 days; they are best enjoyed within 24-48 hours.
