Ingredients

Spicy Butter Chicken:

  • 2 lbs. organic chicken breast, chopped into chunks
  • 2 tsps On Everything All-Purpose Blend
  • 2 tsps smoked paprika, divided
  • 2 Tbsps extra virgin olive oil
  • 2 Tbsps unsalted butter
  • 1 onion, chopped (yellow, white, or red)
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon Garam Masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red pepper flakes
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • Pinch of cayenne pepper
  • 1 (14 oz.) can diced tomatoes, organic
  • 1 cup organic heavy cream
  • ½ cup organic chicken stock

Garnish:

  • Chopped fresh parsley (optional)

Instructions

  1. Season the Chicken: In a bowl, combine the cleaned and rinsed chicken chunks with 1 teaspoon of smoked paprika and the On Everything All-Purpose Blend. Let it sit for 5-10 minutes to absorb the seasonings. For best results, marinate the chicken in a sealed ziplock bag in the refrigerator for at least 3 hours or overnight. Before cooking, bring chicken to room temperature for 15-20 minutes.
  2. Sear the Chicken: Heat the olive oil in a medium skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes on each side until browned. Remove the chicken from the skillet and set aside.
  3. Make the Spicy Butter Sauce: In the same skillet over medium-high heat, melt the butter. Add the minced garlic, onions, and ginger and sauté until fragrant and golden. Stir in the diced tomatoes, On Everything All-Purpose Blend, garam masala, turmeric, remaining smoked paprika, red pepper flakes, cayenne pepper, parsley, salt, and black pepper until well combined. Allow the mixture to cool slightly.
  4. Blend the Sauce: Carefully transfer the sauce mixture to a high-powered blender and blend until smooth, about 2-3 minutes.
  5. Assemble and Simmer: Return the blended sauce to the skillet over medium-high heat. Add the seared chicken chunks and stir to combine. Reduce the heat to low and simmer for 15-20 minutes, allowing the sauce to thicken and the chicken to become tender and fully cooked. For extra richness, you may add an additional 2 tablespoons of butter.
  6. Serve: Garnish with chopped fresh parsley if desired. Serve with naan bread, basmati rice, coconut rice, brown rice, baked sweet potatoes, pita bread, or mashed potatoes for a complete meal. Enjoy!
