Ingredients

Sandwich Ingredients

  • 2 telera or bolillo rolls
  • 1 lb boneless skinless chicken breast or thighs
  • 1 tbsp chipotle in adobo or marinade of choice
  • 1 avocado, sliced
  • ½ cup refried beans
  • ½ cup shredded lettuce
  • 1 tomato, sliced
  • ¼ onion, thinly sliced
  • ¼ cup pickled jalapeños
  • ¼ cup queso fresco or mozzarella cheese
  • 2 tbsp mayonnaise or crema
  • Salt and pepper to taste
  • Olive oil for cooking

Marinade Ingredients

  • Juice of 1 lime
  • 2 garlic cloves, minced
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine the chipotle in adobo, lime juice, minced garlic, and salt. Add the chicken breasts or thighs and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
  2. Cook the Chicken: Heat a skillet over medium heat with a drizzle of olive oil. Remove the chicken from the marinade and cook for 5–6 minutes on each side until fully cooked and juices run clear. Once done, let the chicken rest for a few minutes before slicing it thinly.
  3. Toast the Bread: Lightly toast the telera or bolillo rolls in a skillet or toaster until the crust is golden and crisp. This will add a satisfying crunch to your sandwich.
  4. Assemble the Sandwich: Spread the refried beans on the bottom half of each roll and mayonnaise or crema on the top half. Layer the sliced chicken evenly, then add the avocado slices, cheese, shredded lettuce, tomato slices, thinly sliced onions, and pickled jalapeños.
  5. Serve: Close the sandwich and serve immediately, ideally accompanied by chips, fries, or a simple green salad for a complete meal.

Notes

  • For extra heat, add more chipotle or jalapeños according to taste.
  • You can substitute boneless chicken thighs for juicier meat or breasts for a leaner option.
  • If you don’t have telera or bolillo rolls, soft sandwich rolls or ciabatta work well.
  • Refried beans can be homemade or canned for convenience.
  • Use crema or mayonnaise depending on your preference for creaminess.
  • For a vegetarian version, omit the chicken and add grilled vegetables or mushrooms.
