Ingredients

For the Beef

  • 0.5 lb Ground beef (80/20 lean-to-fat ratio)
  • 2 cloves Garlic, minced
  • 2 tbsp Soy sauce (low-sodium recommended)
  • 0.5 tsp Chili flakes (adjust to taste)
  • 1 tsp Sesame oil (to drizzle at the end)
  • 1 tsp Brown sugar (can substitute with honey)

For the Veggies

  • 1 cup Broccoli florets (blanch for 1 minute if preferred)
  • 0.5 Red bell pepper, sliced
  • 0.5 Zucchini, sliced
  • 0.5 cup Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil (can substitute with other oils)
  • 1 tsp Soy sauce (light soy sauce preferred)

For the Base

  • 1 cup Steamed white rice (rinsed before cooking)

Instructions

  1. Cook the rice: Rinse the rice thoroughly and cook it either in a rice cooker or on the stovetop according to package instructions until tender and fluffy.
  2. Brown the beef: Heat a large skillet or wok over medium-high heat. Add the ground beef and cook it, breaking it apart, until browned and cooked through.
  3. Infuse the spice: Push the cooked beef to one side of the skillet. Add minced garlic and chili flakes to the empty side, stirring until fragrant—about 30 seconds.
  4. Deglaze: Pour soy sauce and brown sugar into the pan, mixing everything together. Let it simmer for 1 minute to develop flavors and caramelize slightly.
  5. Remove the beef: Transfer the beef mixture to a plate and set aside to keep warm.
  6. Sauté the vegetables: In the same skillet, add olive oil and heat over medium-high. Add broccoli florets, red bell pepper, zucchini, mushrooms, and minced garlic. Stir-fry until veggies are tender but crisp, about 4-5 minutes.
  7. Finish strong: Drizzle the sautéed vegetables with sesame oil and soy sauce. Return the beef to the skillet and mix to combine all components evenly.
  8. Serve immediately: Plate the steamed rice and top or serve alongside the spicy ground beef stir-fry with garlic vegetables for a complete meal.

Notes

  • Use low-sodium soy sauce to control salt levels.
  • Adjust the chili flakes to your preferred heat level.
  • Blanching broccoli is optional but helps maintain bright color and tenderness.
  • Substitute ground turkey or chicken for a leaner protein option.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
