These Spicy Sriracha Hasselback Kielbasa Bites are a flavorful and easy appetizer featuring kielbasa sausage sliced into bite-sized hasselback pieces, slathered in a zesty sriracha mayo, and crisped to perfection in the air fryer. Kielbasa

  • 2 rings (13.9 ounces each) Kielbasa

Sriracha Mayo Sauce

  • ¾ cup (174 g) mayonnaise
  • 4 ½ teaspoons Sriracha
  • 1 ½ teaspoons freshly squeezed lime juice

Instructions

  1. Prepare the Kielbasa Slices: Slice the Kielbasa into ¼-inch slices without cutting all the way through by placing the sausage between two chopsticks or skewers to prevent cutting fully. Use a sharp knife and slice in a downward motion until stopped by the chopsticks.
  2. Cut into Bite-Sized Pieces: Next, slice the hasselbacked sausage crosswise into 1-inch bite-sized pieces, creating roughly 20 bites per ring or 40 bites total from both rings. Place these bite pieces in a large bowl or on a baking sheet.
  3. Make the Sriracha Mayo: In a small bowl, combine mayonnaise, Sriracha, and freshly squeezed lime juice, stirring until smooth to create a spicy, tangy sauce.
  4. Brush Mayo Onto Kielbasa: Generously brush about half of the sriracha mayo sauce over the kielbasa bites, ensuring the sauce gets in between each cut section for flavor infusion. Reserve the remaining sauce covered in the refrigerator for serving later.
  5. Arrange in Air Fryer: Place the kielbasa bites in a single layer inside the air fryer basket. Depending on your air fryer size, work in batches if necessary to avoid overcrowding.
  6. Air Fry the Bites: Air fry at 400°F (204°C) for 7 to 9 minutes until the kielbasa is browned and crispy, shaking the basket halfway through cooking to promote even browning.
