A delightful twist on the classic Italian dessert, this Strawberry Tiramisu features layers of ladyfingers dipped in a fresh strawberry sauce, creamy mascarpone filling, and juicy sliced strawberries. Perfectly sweet and luscious, this no-bake dessert is ideal for spring and summer gatherings.

Ingredients

Strawberry Sauce

  • ⅓ cup strawberry jam
  • 3 Tablespoons water
  • 1 Tablespoon lemon juice

Filling

  • 8 ounces mascarpone cheese
  • ½ cup heavy cream
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest

Assembly

  • 24 ladyfingers (Savoiardi brand recommended)
  • 2 cups sliced strawberries

Instructions

  1. Make Strawberry Sauce: In a small mixing bowl, stir together ⅓ cup strawberry jam, 3 tablespoons water, and 1 tablespoon lemon juice until well combined and smooth.
  2. Make Filling: In a medium bowl, beat together 8 ounces mascarpone cheese, ½ cup heavy cream, ½ cup sugar, ½ teaspoon vanilla extract, and 1 teaspoon lemon zest. Beat for about 2 minutes until the mixture is thick, creamy, and resembles whipped cream.
  3. Dip Ladyfingers: Quickly dip 12 ladyfinger cookies one at a time into the strawberry sauce, ensuring they are lightly coated but not soggy. Arrange them in a single layer in an 8×8 inch square baking dish or similar sized serving dish.
  4. Spread Cream and Strawberries: Evenly spread half of the mascarpone cream filling over the layer of soaked ladyfingers. Then, place half of the sliced strawberries evenly on top of the cream layer.
  5. Create Second Layer: Repeat the process by dipping the remaining 12 ladyfingers in the strawberry sauce and layering them over the strawberries. Spread the remaining cream filling on top, followed by the rest of the sliced strawberries.
  6. Chill: Cover the assembled tiramisu with plastic wrap and refrigerate for at least 8 hours, or overnight, to allow the flavors to meld and the dessert to set.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture.
  • Dip the ladyfingers quickly to prevent them from becoming too soggy and losing their texture.
  • The dessert can be assembled a day ahead to save time and enhance flavor blending.
  • For a lighter version, you can reduce the sugar in the filling to ⅓ cup.
  • Make sure to chill the tiramisu long enough so the layers set properly and each bite is creamy and flavorful.
