Instructions

  1. Steep the Tea: Heat water to 185°F and steep the jasmine green tea for 3-4 minutes. Remove the teabag and chill the tea in the refrigerator until cool.
  2. Prepare Strawberry Sauce: Wash and chop strawberries. In a small saucepan, combine strawberries, sugar, lemon juice, and vanilla extract. Heat over medium-low heat until it begins to simmer, then reduce heat and simmer while stirring continuously with a rubber spatula to mash the strawberries and prevent burning. Cook for 15-25 minutes until the mixture becomes a puree with desired consistency.
  3. Strain the Sauce: Pour the strawberry sauce through a fine mesh sieve into a bowl, pressing gently to strain out seeds, resulting in a smooth sauce.
