These Sweet Chili Halloumi Wraps are a quick and flavorful vegetarian meal perfect for lunch or a light dinner. Crispy fried halloumi cheese is combined with fresh bell peppers and cucumber, then drizzled with a tangy sweet chili sauce and lime juice, all wrapped in soft flour tortillas for a deliciously satisfying bite.

Ingredients

Halloumi and Sauce

  • 250g halloumi cheese
  • 4 tbsp sweet chili sauce
  • 1 tbsp olive oil

Vegetables

  • 1 cup mixed bell peppers, sliced
  • 1 cup cucumber, sliced
  • 2 tbsp freshly squeezed lime juice

Wrap

  • 4 soft flour tortillas

Instructions

  1. Prepare Ingredients: Slice the halloumi cheese into 1/4-inch thick pieces. Chop the mixed bell peppers and cucumber into bite-sized slices for easy wrapping and eating.
  2. Cook Halloumi: Heat a non-stick skillet over medium heat and add olive oil. Once the oil is hot, fry the halloumi slices for 2-3 minutes on each side until they turn golden brown and crispy on the outside.
  3. Assemble Wraps: Lay a soft flour tortilla flat on your workspace. Layer the crispy fried halloumi, followed by the sliced bell peppers and cucumber on top.
  4. Add Flavor: Drizzle the sweet chili sauce over the fillings to add a sweet and spicy kick. Then, squeeze fresh lime juice over all the ingredients to bring a zesty brightness to the wrap.
  5. Roll and Serve: Tightly roll up the tortilla to enclose all the fillings securely. Cut in half if preferred and serve immediately while the halloumi is warm and the vegetables fresh.

Notes

  • For extra heat, add some sliced fresh chili or a dash of chili flakes.
  • You can substitute flour tortillas with gluten-free wraps if needed.
  • To make it more filling, add some leafy greens like spinach or lettuce inside.
  • Halloumi can be replaced with paneer or firm tofu for a variation in taste and texture.
  • Serve with a side of extra sweet chili sauce for dipping if desired.
