White Christmas Mojitos are a refreshing and tropical twist on the classic mojito, combining the zesty lime and fresh mint flavors with creamy coconut milk and a blend of white and coconut rums. This festive cocktail is topped with sparkling water and garnished with vibrant pomegranate arils for a delightful holiday treat.

Ingredients

For the Mojito Base

  • 3/4 cup lime juice
  • 1/4 cup packed mint leaves, plus extra for garnish
  • 1/2 cup sugar
  • 1/2 cup white rum
  • 1/2 cup coconut rum
  • 1 cup canned coconut milk

To Serve

  • Sparkling water, to top
  • Pomegranate arils, for garnish
  • Ice cubes

Instructions

  1. Muddle the Mint and Sugar: In a large pitcher, muddle the 1/4 cup packed mint leaves with the 1/2 cup sugar and 3/4 cup lime juice. This process releases the mint’s essential oils and blends the flavors together.
  2. Optional Strain: For a smoother texture and clearer drink, strain out the muddled mint leaves from the mixture using a fine mesh sieve, discarding the solids.
  3. Add Rums and Coconut Milk: Pour in 1/2 cup white rum, 1/2 cup coconut rum, and 1 cup canned coconut milk into the pitcher with the mint-lime mixture. Stir thoroughly to combine all ingredients.
  4. Prepare Glasses: Fill four glasses halfway with ice cubes to keep the drinks chilled and refreshing.
  5. Pour the Mojito Mixture: Pour the coconut rum and lime mixture evenly into the prepared ice-filled glasses, filling each glass about three-quarters full.
  6. Top with Sparkling Water: Fill each glass the rest of the way with sparkling water to add a fizzy, light finish to the drink.
  7. Garnish and Serve: Garnish each mojito with fresh mint leaves and a sprinkle of pomegranate arils for a festive, colorful touch. Serve immediately and enjoy your White Christmas Mojitos!

Notes

  • For a less sweet drink, reduce the sugar quantity slightly or adjust according to taste.
  • Using fresh lime juice is recommended for the most authentic flavor.
  • Straining the mint leaves is optional; leaving them in will add more texture and mint flavor.
  • Substitute sparkling water with club soda or tonic water for different flavor profiles.
  • Make sure to use canned coconut milk (not coconut cream) for a smoother consistency.
