Instructions

  1. Prepare the Batter: In a large mixing bowl, whisk together the eggs, mashed bananas, sugar, oil, and Greek yogurt until smooth and fully combined.
  2. Mix Dry Ingredients: In a separate bowl, sift together the whole wheat flour, cornstarch, ground cinnamon, baking powder, and salt to ensure even distribution.
  3. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined without overmixing to keep the bread tender.
