Ingredients

For the Filling

  • 200 g white chocolate, finely chopped
  • 100 ml heavy cream
  • 300 g sieved cherry jam or jelly
  • Optional: 1-2 tablespoons cherry liqueur

For Decoration

  • 100 g dark or milk chocolate, melted
  • A small handful of finely chopped dark chocolate

Instructions

  1. Prepare the Cocoa Dough: In a large bowl, cream the soft butter with granulated sugar and vanilla sugar or extract until light and fluffy. Add the egg and mix well. Gradually sift in the all-purpose flour and unsweetened cocoa powder, then gently combine to form a smooth and pliable dough. Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up.
  2. Make the White Chocolate Filling: Heat the heavy cream in a small saucepan until just about to boil. Pour the hot cream over the chopped white chocolate in a heatproof bowl. Let it sit for a minute, then stir until smooth and glossy. Allow the mixture to cool to room temperature, then refrigerate until thickened but spreadable.
  3. Assemble the Cookies: Preheat the oven to 180°C (350°F). Roll out the chilled cocoa dough on a lightly floured surface to about 3-4 mm thickness. Cut the dough into equal-sized rounds or shapes as desired. Place half of the dough pieces on a baking sheet lined with parchment paper. Spread a thin layer of cherry jam over these pieces, optionally mixing the jam with cherry liqueur for enhanced flavor. Add a dollop of the white chocolate filling on top of the jam layer, then cover with the remaining dough pieces and gently press the edges to seal.
  4. Bake the Cookies: Bake the assembled cookies in the preheated oven for approximately 12 minutes or until the edges are firm but the cookies remain tender. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
