Ingredients

Beef Filling

  • 1 pound 90/10 ground beef
  • 1/2 medium onion, finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1/4 cup water or beef broth, as needed
  • Salt to taste

Tacos

  • 8 (6 inch) taco-size flour tortillas
  • 2 to 3 cups mozzarella cheese, shredded
  • Avocado or vegetable oil, for frying

Garnish

  • Fresh cilantro, finely chopped

Instructions

  1. Prepare the beef filling: In a large skillet over medium heat, add the ground beef and finely chopped onions. Cook until the beef is browned and onions are translucent, breaking the meat apart as it cooks.
  2. Add seasonings and tomato paste: Stir in the taco seasoning and tomato paste, combining well with the cooked beef. Pour in water or beef broth gradually to keep the mixture moist, and simmer for about 5-7 minutes until the flavors meld together. Season with salt to taste.
  3. Prepare the tortillas: In another skillet or frying pan, heat a small amount of avocado or vegetable oil over medium-high heat. Place one flour tortilla in the pan.
  4. Add cheese and beef filling: Sprinkle a generous amount of shredded mozzarella cheese over half of the tortilla, then add a few spoonfuls of the cooked ground beef mixture on top of the cheese.
  5. Fold and crisp the taco: Fold the tortilla in half over the filling. Cook for about 2-3 minutes on each side until the tortilla is golden brown and crispy and the cheese has melted inside. Repeat with the remaining tortillas and filling.
