Delicious and refreshing Strawberry Parfaits layered with macerated fresh strawberries, creamy Greek yogurt and whipped cream, and a crunchy granola topping. Perfect for a light dessert or healthy snack, these parfaits combine fresh fruit with creamy and crunchy textures for a delightful treat that’s easy to prepare and serves cold.

Ingredients

For the Strawberry Layer

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (optional, for macerating the berries)
  • 1 teaspoon fresh lemon juice

For the Cream Layer

  • 1 cup Greek yogurt (plain or vanilla)
  • ½ cup heavy cream, whipped to soft peaks
  • 2 tablespoons honey or maple syrup

For the Crunch Layer

  • 1 cup granola or crushed digestive biscuits
  • 2 tablespoons chopped nuts (optional, for extra crunch)

Instructions

  1. Prepare the Strawberries: Hull and slice your fresh strawberries into even pieces. In a small bowl, toss the strawberries with sugar (if using) and lemon juice. Let the berries sit for 5–10 minutes to macerate, which makes them juicier and sweeter.
  2. Whip the Cream: Pour the heavy cream into a mixing bowl. Using a whisk or electric mixer, whip the cream until soft peaks form. For best results, chill the bowl and whisk beforehand to help the cream whip faster.
  3. Mix the Yogurt Layer: In another bowl, combine the Greek yogurt with honey or maple syrup. Stir gently until smooth and creamy.
  4. Assemble the Parfaits: Start by spooning a layer of the yogurt mixture into the bottom of your parfait glasses or jars. Add a layer of granola or crushed biscuits on top of the yogurt. Spoon a layer of macerated strawberries over the granola. Repeat the layers until the glass is full, finishing with a few strawberries on top for garnish. Press layers down gently with the back of a spoon to create clean, even layers.
  5. Add Final Touches: Sprinkle chopped nuts or drizzle a little honey over the top layer if desired. Chill the parfaits in the fridge for 30 minutes to allow the flavors to meld. Serve cold to enjoy the best texture and fresh strawberry flavor.

Notes

  • Letting the strawberries macerate enhances their sweetness and juiciness.
  • Chilling the mixing bowl and whisk helps the cream achieve soft peaks faster.
  • You can substitute granola with crushed digestive biscuits for a different texture.
  • Adding nuts on top provides extra crunch and flavor but can be omitted for nut allergies.
  • Parfaits are best served chilled to maintain texture and flavor balance.
