Ingredients

For the Pineapple

  • 1 fresh pineapple

For the Marinade

  • Pinch of salt

Instructions

  1. Prepare the Pineapple: Use a sharp knife to cut off the top and bottom of the pineapple, then carefully remove the rind. Slice the pineapple into 3/4 to 1-inch thick spears or rings. If using rings, remove the core by cutting with a small cutter. Place the pineapple pieces into a large zip-top bag and set aside.
  2. Make the Marinade: In a small bowl, whisk together the melted butter, dark brown sugar, dark rum (if using), ground cinnamon, and a pinch of salt until the mixture is smooth and well combined. Pour the marinade into the bag with the pineapple, gently tossing to coat all the pieces evenly. Seal the bag and refrigerate for 20 to 30 minutes to allow the flavors to meld.
  3. Preheat the Grill: Warm your grill or grill pan over medium heat, aiming for a temperature between 375°F and 400°F. This heat level will help caramelize the sugars and give the pineapple a nice char.
  4. Grill the Pineapple: Place the marinated pineapple pieces on the hot grill. Cook for 4 to 6 minutes per side, brushing each side with the leftover marinade as they cook to keep them moist and flavorful. Grill until grill marks appear and the pineapple softens slightly.
