Ingredients

Beef and Marinade

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

  • Optional: 1 tsp sugar

Vegetables and Others

  • 1 cup kimchi, chopped
  • 1 medium yellow onion, sliced
  • 1 cup bell peppers (any color), sliced
  • 2 tsp vegetable oil
  • 4 slices provolone or American cheese

Instructions

  1. Prepare the Marinade: In a bowl, mix the soy sauce, sesame oil, minced garlic, and sugar if using. Add the thinly sliced beef sirloin and toss to coat evenly. Let it marinate for 10 minutes to absorb the flavors.
  2. Sauté the Vegetables: Heat 1 teaspoon of vegetable oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers and cook until softened, about 4-5 minutes. Remove from the skillet and set aside.
  3. Cook the Beef: In the same skillet, add the remaining teaspoon of vegetable oil. Add the marinated beef and cook on high heat until the beef is browned and cooked through, about 5-7 minutes.
  4. Add Kimchi and Vegetables: Return the cooked onions and peppers to the skillet with the beef. Stir in the chopped kimchi and cook for another 2-3 minutes, allowing flavors to meld.
  5. Melt the Cheese: Lower the heat to medium-low. Lay the slices of provolone or American cheese evenly over the beef and vegetable mixture. Cover the skillet with a lid and cook for 1-2 minutes until the cheese melts.
  6. Serve: Once the cheese is melted and bubbly, remove from heat. Serve hot on sandwich rolls or with rice as preferred.
